CHOCOLATE KHEER RECIPE












Mouth watering Indian desert made with basmati rice milk and chocolate.

Ingredients:

Basmati rice.              1/2 cup
Milk.                             2 cups
Sugar.                           2 tablespoon
Cocoa powder            1/2tablespoon
Drinking chocolate    2 tablespoon
nutella.                         1 tablespoon (optional)


Method:-

Wash the rice properly till water runs clear of the starch.

Cook rice in the pressure cooker for 15 minutes and keep aside.

In a pan add milk and sugar, and boil it for 5 minutes
Then add cocoa powder and drinking chocolate and mix well.

Add the boiled rice in milk and simmer it for about 10 more minutes.

Yummy chocolate kheer is ready to serve

Serving options

Serve hot or cold add Nutella spread this is optional








Tava pizza

Ingredients for Tawa Pizza Recipe

For making dough
  • Maida (all purpose flour) - 2 cup
  • Olive oil - 2 tbsp
  • Salt - ½ tsp
  • Sugar - 1 tsp
  • Instant yeast - 1 tsp
For pizza topping
  • Capsicum     1 no.
  • corn -             3 tsp
  • onion sliced   1 no
  • Pizza sauce   ½ cup
  • Mozzarella cheese  ½ cup
  • Italian mix herbs ½ tsp


    How to make Pizza on Tawa

    Strain maida in any utensil; add dry instant yeast, olive oil, salt and sugar. Mix all ingredients well with help of lukewarm water knead the flour. Knead the dough for 5-7 minutes until it becomes soft. Grease a bowl and place dough in it for 2 hours so that it gets fermented well. Dough for making pizza is ready.
    Prepare topping for the pizza:
    Cut capsicum, remove all its seeds and slice it thinly. Cut baby corn in small round pieces. Cook vegetables for 2 minutes.
    Take half amount of pizza and make a round ball. With help of dry maida make a ½ cm thick chapatti with a diameter of 10-12 inch.
    Preheat a pan or tawa. If you are not using non stick pan, then grease it with little oil and place pizza inside it. Cover it and cook for 2 minutes or until the lower side gets little brown.

    Flip it up side down and reduce the flame to minimum. Garnish pizza with topping. Firstly layer pizza sauce and then place capsicum and corn on the pizza. Sprinkle mozzarella cheese as well.
    Cover pizza and cook for 5-6 minutes on medium flame until the cheese gets melted and the lower side gets little brown.  Keep checking after every 2 minutes.
    Very delicious pizza is made. Sprinkle some herbs on top of the pizza. Serve pinning hot pizza and enjoy eating it.
    Suggestion:


      • Choose pizza topping as per your taste and desire like corn, olives, paneer, tofu or onion. Any cooking oil can be used for mixing in dough.
      • If you are using dry yeast instead of instant yeast, then mix it in sugar and lukewarm milk so that it becomes active.

      Breakfast Banana Pops






      (2 bananas makes 4 pops)


      bananas (Or try this idea with strawberries, pineapple, etc.)
      yogurt of choice (any flavour or plain}
      granola of choice, or crushed cookies or Healthy Graham Crackers
      add-on ideas: mini chocolate chips, coconut shreds, cinnamon sugar, raisins, etc.
      popsicle sticks or silverware to insert in the bananas

      Procedure:

      Pour granola into a very shallow dish or plate. Peel bananas, cut in half, and insert popsicle sticks. Dip into yogurt (or coat with a knife), then roll into granola and add-ons. (I stuck the chips on by hand, after rolling in the granola.) Place on a parchment or wax-lined tray and freeze. Keep uneaten pops in the freezer.

      Breakfast Popsicles







      Ingredients

      Yogurt (I used non-fat vanilla)

      Fruit, thin sliced (I used kiwi, strawberries and blueberries)

      Directions

      Add a little yogurt to mold,  slide fruit slices down the sides if you want them to show and look pretty.  Add more yogurt and them more fruit until mold is full.

      Note:   You can also chop your fruit small and combine it with the yogurt- then pour into molds and freeze.  (Work better with the small, narrow molds.)

      Unmold and serve with granola if desired.

      GUAVA CHEESE





      A chewy fudge-like sweet, Guava Cheese is best made with fresh guavas. They are a rich source of vitamin C - from 3-6 times more than in oranges to almost 30 times more than that found in bananas! Most of this vitamin C is found in the skin of the fruit.

      Ingredients:

      1 kg soft guavas
      Sugar (amount based on how much pulp you get out of the guavas)

      Method

      Cut the guavas into quarters and remove the seeds.
      Put the seeds in a sieve and add a small amount of water. Rub into the sieve and press down with a flat spoon so as to extract the
      pulp surrounding the seeds, into a bowl kept below the sieve.
      Blend the gauva pieces to s smooth pulp in your food processor.
      Measure how many cups of pulp you have - include the pulp removed from around the seeds.
      Put all the pulp into a large, flat, heavy-bottomed dish on a medium flame.
      Add sugar to the amount of one cup less than the number of cups of guava pulp.
      For example, if you had 6 cups of pulp, add 5 cups of sugar to it.
      Cook, stirring frequently, till it becomes hard to stir and the
      guava cheese begins to come away from the sides of the pan.
      Grease a platter and spoon the guava cheese onto it. Spread into a thick layer.
      Allow to cool a little and while still warm, cut into diamond shapes.
      When completely cooled, store in an air-tight container.

      Indian Style pasta







      Indian Style pasta! Pasta is made from Semolina flour. It's rich in protein and fiber.

      Ingredients:


      Pasta - 1/2 packet (225 grams)
      Vegetables - onion, cabbage, carrot, capsicum, tomato (2 cups)
      Salt
      Oil - 2 tbsp
      Chilli powder - as per taste
      Chole Masala or Pav Bhaji Masala - 3/4 tsp
      Fresh Parmesan Cheese - 1 tbsp
      Coriander leaves - to garnish

      Method:

      Follow the directions on the back of pasta packet and cook.
      Heat oil in a pan and fry chopped veggies one after another until they are almost cooked but slightly crunchy.
      Add chilli powder, salt and chole masala.
      Add cooked pasta and toss well.
      Garnish with coriander leaves.
      Sprinkle some parmesan cheese.

      If you love bananas, chocolate and are nuts about some crunch, then this one will please your palate. We are not chocolate lovers in the house  but my little one likes to enjoy some on and off.
      This is his favorite snack and I don't mind him indulging given that this is on the nutritious side. Instead of butter, I use Coconut oil but you can use butter instead. You can skip the nuts as well and use any of the variations I recommend here.


      Prep Time: Under 15 min
      Cook Time: Under 15 min
      Serves: 4 people
      Yield: About 15-20 bites depending upon the size of the bananas

      Ingredients
      About 3 small-medium ripe Bananas,
      1 cup Semi-Sweet Chocolate Chips
      2 Tbsp melted Extra Virgin Coconut Oil,
      2-3 tbsp assorted Nuts (Almonds, Pistachios, Pecans, Hazelnuts, Walnuts etc), (optional)


      Method
      Cut the bananas into bite sized pieces. You really don't need to be fussed about this.

      Place them on a foil covered baking sheet (or use parchment paper).

      Poke them with cocktail forks or any other fancy things you might possess in your pantry waiting to be put to good use. Freeze them for about 2 hours or until frozen.

      Meanwhile dry toast any nuts of your choice.

      Cool them and chop them coarsely into teeny tiny pieces. Set aside.

      Stir together the coconut oil and chocolate chips on top of a double boiler. Make sure to melt the oil before using. I used almost 2 tbsp (may be 1.5 tbsp? ) of oil. Keep stirring until the chocolate is melted and all smooth (and velvety)
      Now remove the frozen banana, dip it in the chocolate - completely or half way as per your liking.
      You can either sprinkle the nuts on top of it and just roll it on the nuts
      Place it back on the cold baking sheet until dried.

      Serve this pronto or re-freeze it until serving. You might have some chocolate sauce leftover that you can cover and store at room temperature (note: Not in the fridge) for up to a month.

      Yogurt Fluff



      Ingredients:

      2 cups fruit puree,
      sugar to taste
      1 tsp grated lemon rind
      2 tsp. gelatin dissolved in 2 tbsp water
      1 cup yogurt
      1 egg white beaten stiff
      A little fruit for decoration

      Method:

      Stir in the lemon rind and sugar into the fruit puree. 
      A variety of fruits like strawberries,bananas,pineapple or apple may be used.
      Mix the gelatin into the puree stir in beaten yogurt and leave the mixture to set.
      When on point setting, fold in the beaten whites and spoon into individual bowl
      Serve,decorate with chopped fruits
       


      Eggless Vanilla Cake

      Enjoy the joy of feeding by making this egg less vanilla pressure cooker cake for your loved ones!


      Sift 2 cups Atta and 2.5 tsp baking powder.

      Add 1/4 tsp salt, 1.5 cups powdered sugar, 1/2 cup butter, 1/2 cup water and 1 tsp vanilla essence. Beat the mixture well.

      Add 3/4 cup plain yogurt mix well. Transfer the batter to a greased cake tin. Preferably, divide the batter into two cake tins.

      Heat an empty and covered pressure cooked for 3 minutes on high and then place the cake tin inside it.

      Cover and cook for 30 minutes on low heat. Repeat with the next cake tin.

      APPLE KHEER

      Ingredients

      • 4 apple peeled and grated
      • 1 liter milk
      • 1/2 tsp cardamom powder
      • 5-6 almond
      • 4 tbsp sugar
      • 5-6 pista

      Instructions

      1. Boil milk in heavy bottom pan
      2. Add sugar to it
      3. Stir and cook on a medium flame till the milk reduce half
      4. Now add apples to it
      5. Remove from the flame after first boil
      6. now add pistachio cardamom and almond and refrigerate it
      7. After it chilled completely its ready to serve
      Yield: 4-5persons

      Mini Triangle Stuffed Paratha

      Makes : 6 pieces

      Ingredients Needed:

      For the dough

      Whole Wheat flour / Atta - 1 cup
      Salt to taste

      For the Stuffing:

      Onion - quarter of a medium
      Carrot - 1 small
      Cabbage - handful
      Beans - 4-5 nos
      Tomato - quarter piece
      Cumin Seeds - 1/4 tsp
      Salt to taste
      Tomato Sauce - 1 tsp
      Red chili powder - 1/4 tsp
      Hot Tomato Sauce - 1/2 tsp (opt)
      Oil - 1 tsp

      Method to prepare:

      For the dough:
      Mix the flour with salt and enough water to knead into a soft dough

      For the stuffing:

      Chop all the vegetables into fine pieces, heat a non stick pan with oil. Sauté the cumin, along with onions. Then add the vegetables one by one. Simmer the flame and cover with lid.

      Add the salt and chili powder. Mix well. Then add the tomato sauce and the hot tomato sauce if you are using it.

      This almost gets done in 5 -7 mins. It will be great if the vegetables are still crunchy.

      For making the mini parathas:

      Heat a pan for roast the parathas.

      Divide the dough into small balls. Roll them into thin discs.

      Cut through in middle to get half moons. Scoop the stuffing and place over the middle. Bring one side over the stuffing and seal the sides to ensure the stuffing doesn't come out.

      Roast them over hot pan and grease oil over it. Cook on both sides by lightly pressing them to make sure all the spots are cooked.


       The vegetable mix for this is quite simple. You can actually add whatever is available in your pantry. As Carrots, Beans and Cabbage are eternal in my fridge I thought I will just use them.

      You can get very creative in making this. I just added whatever I felt my kids will eat. Of course I ended up eating the most.

      sweet and salty kheer

      Ingredients  

        2 large   Banana,peeled and thinly sliced
        2 large   Orange,segmented
        2 tablespoons  Sugar   
        1/2 teaspoon Black peppercorns,crushed
        1/2 teaspoon Red chilli powder
        1 teaspoon Salt
        3 cups Yogurt
        Saffron (kesar),Dissolved in water    a few

      Method

      In a large bowl mix together sugar, crushed peppercorns, red chilli powder, salt and yogurt.
      Add bananas and oranges and mix well.
      Serve with saffron sprinkled on top.
